Hawaiian Spam Musubi

Hawaii’s favorite snack: a slice of pan-fried Spam on sushi rice, wrapped with a strip of nori. Sweet, salty, and portable. You’ll need a musubi mold (or use the empty Spam can).

Ingredients

  • 1 can (12 oz) Spam, cut into 8 slices
  • 3 cups cooked sushi rice (warm)
  • 4 sheets nori seaweed, each cut in half lengthwise
  • Glaze: 3 tablespoons soy sauce, 2 tablespoons sugar, 1 tablespoon mirin
  • 1 tablespoon rice vinegar and 1 tsp sugar (for seasoning rice)
  • Furikake (optional)

Instructions

    Season the warm rice by gently folding in rice vinegar and sugar. Optionally sprinkle in furikake.

    Mix soy sauce, sugar, and mirin in a small bowl. Pan-fry Spam slices in a skillet over medium-high heat until caramelized on both sides, about 2 minutes per side. Brush or drizzle the glaze over the Spam in the pan. Let it caramelize for another 30 seconds. Remove.

    Lay a nori strip on a clean surface. Using a musubi mold (or the empty Spam can with both ends removed), place the mold in the center of the nori. Press in about 1/3 cup rice firmly. Place a glazed Spam slice on top. Remove the mold.

    Wrap the nori strip up and around the rice and Spam, sealing with a dab of water on the nori edge.

    Let rest seam-side down for a minute before eating. Best served at room temperature.
