Jamaican Beef Patties
Jamaica’s most iconic snack: flaky, golden turmeric-tinted pastry wrapped around a boldly seasoned curried beef filling. Perfect for eating on the go.
Ingredients
- Dough: 3 cups all-purpose flour, 1 tsp turmeric, 1/2 tsp salt, 1/2 cup cold butter (cubed), 1/4 cup cold shortening, 1/2 cup ice water, 1 egg yolk
- Filling: 1 lb (450g) ground beef, 1 medium onion (finely diced), 3 scallions (sliced), 2 cloves garlic (minced), 1 scotch bonnet pepper (minced, seeded for less heat), 1 tablespoon curry powder, 1 teaspoon thyme, 1/2 teaspoon allspice, 1/2 cup breadcrumbs, 1/2 cup beef broth, 2 tablespoons vegetable oil, salt and pepper
- 1 egg beaten with 1 tablespoon water (egg wash)

Make the dough: Whisk flour, turmeric, and salt. Cut in butter and shortening until pea-sized pieces remain. Add egg yolk and ice water, mixing until dough just comes together. Wrap and refrigerate 30 minutes.

Make the filling: Heat oil in a skillet. Cook onion, scallions, garlic, and scotch bonnet for 5 minutes. Add beef, breaking into fine crumbles. Cook until browned. Add curry powder, thyme, allspice, salt, and pepper. Add broth and breadcrumbs. Cook until liquid is absorbed and filling is thick. Let cool.

Preheat oven to 400°F (200°C). Roll dough to 1/8 inch thickness. Cut 5-6 inch circles. Place 2-3 tablespoons of filling on one half of each circle.

Fold over and crimp edges with a fork. Place on parchment-lined baking sheets. Brush with egg wash.

Bake 25-30 minutes until deep golden. Let cool slightly before eating.
