Russian Beef Stroganoff
Tender beef strips in a creamy mushroom-sour cream sauce, traditionally served over egg noodles.
Ingredients
- 1.5 lbs beef sirloin, cut into thin strips
- 8 oz mushrooms, sliced
- 1 onion, diced
- 3 cloves garlic
- 2 tbsp flour
- 1 cup beef broth
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 2 tbsp butter
- 2 tbsp oil
- Egg noodles, parsley, salt, pepper

Season beef. Heat oil in a skillet over high heat. Sear beef in batches until browned, about 1 minute per side. Remove.

Melt butter. Cook onions and mushrooms until golden, 8 minutes. Add garlic.

Sprinkle flour over, stir 1 minute. Add broth, whisking. Stir in mustard.

Reduce heat. Stir in sour cream. Return beef and any juices. Heat gently (don't boil).

Serve over buttered egg noodles, garnished with parsley.
