Thai Coconut Sticky Rice with Mango
Thailand's favorite dessert: warm, sweet coconut-infused sticky rice with ripe mango and toasted sesame seeds.
Ingredients
- 1.5 cups Thai sticky rice (soaked 4 hours)
- 1 can coconut milk
- 1/3 cup sugar
- 1/2 tsp salt
- 2 ripe mangoes, sliced
- 1 tbsp toasted sesame seeds

Drain soaked rice. Steam in a bamboo steamer or cheesecloth-lined steamer for 25-30 minutes until tender.

Heat coconut milk with sugar and salt until dissolved. Reserve 1/4 cup for topping.

Pour the rest of the coconut sauce over the hot rice. Stir gently. Let absorb for 15 minutes.

Mound rice on a plate, top with mango slices.

Drizzle with reserved coconut sauce and sprinkle with sesame seeds.
