Colombian Aji (Hot Sauce)
Every Colombian table has a bowl of aji — a fresh, chunky hot sauce that brightens everything it touches. Tangy, herby, and gently spicy, it’s the condiment you’ll put on everything.
Ingredients
- 4 scallions, finely chopped
- 1/2 cup fresh cilantro, finely chopped
- 1-2 aji peppers or jalapeños, finely diced (seeded for less heat)
- 1 medium tomato, finely diced
- 1/4 cup white vinegar
- 1/4 cup water
- 1 tablespoon lime juice
- Salt to taste

Combine scallions, cilantro, peppers, and tomato in a bowl.

Add vinegar, water, and lime juice. Stir to combine.

Season with salt. Let sit for at least 15 minutes for flavors to meld.

Serve at room temperature with arepas, empanadas, grilled meats, rice, beans, or anything you want to brighten up. Keeps in the fridge for up to 1 week.
