Ingredients

  • 3 large ripe tomatoes, cut into irregular chunks
  • 1 English cucumber, cut into half-moons
  • 1/2 red onion, thinly sliced
  • 1 green bell pepper, cut into rings
  • 1/2 cup Kalamata olives
  • 1 block (7 oz / 200g) feta cheese (one thick slab, not crumbled)
  • 3-4 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper

Instructions

    Arrange tomatoes, cucumber, onion, and bell pepper on a wide plate or shallow bowl. Scatter olives over the top.

    Place the slab of feta right in the center (in Greece, they never crumble it).

    Drizzle generously with olive oil and vinegar. Sprinkle oregano, salt, and pepper over everything.
