Filipino Pancit Bihon
The Philippines' celebratory rice noodle dish: thin noodles with chicken, shrimp, vegetables, and a savory sauce. Symbolizes long life.
Ingredients
- 12 oz rice vermicelli (bihon)
- 1/2 lb chicken, sliced
- 1/2 lb shrimp
- 2 cups cabbage, shredded
- 1 carrot, julienned
- 1 cup green beans
- 1 onion, sliced
- 4 cloves garlic
- 3 tbsp soy sauce
- 2 tbsp fish sauce
- 2 cups chicken broth
- Calamansi or lemon wedges

Soak rice vermicelli in warm water for 10 minutes. Drain.

Heat oil in a wok. Sauté onion and garlic. Add chicken and shrimp, cook through.

Add carrots and green beans, stir-fry 2 minutes. Add cabbage.

Pour in chicken broth, soy sauce, and fish sauce. Bring to a simmer.

Add the soaked noodles. Toss until they absorb the liquid, about 5 minutes. Serve with calamansi wedges.
