Indian Aloo Gobi
A dry curry of potatoes and cauliflower with warming Indian spices. Simple, fast, and a vegetarian staple.
Ingredients
- 1 head cauliflower, florets
- 3 potatoes, cubed
- 1 onion, diced
- 2 tomatoes, diced
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp coriander
- 1 tsp garam masala
- 1/2 tsp chili powder
- 3 tbsp oil
- Cilantro, salt

Heat oil in a pan. Add cumin seeds, let splutter. Add onion, cook until golden.

Add ginger-garlic paste, cook 1 minute. Add tomatoes and all spices except garam masala. Cook until tomatoes break down.

Add potatoes and cauliflower. Toss to coat. Add 1/4 cup water.

Cover and cook on low heat for 20-25 minutes until vegetables are tender, stirring occasionally.

Sprinkle with garam masala and cilantro. Serve with roti or rice.
