Maine Lobster Roll
Maine's iconic summer sandwich: chunks of cold lobster meat lightly dressed with mayo, lemon, and celery, served in a buttery toasted top-split bun.
Ingredients
- 1 lb cooked lobster meat, chunked
- 3 tbsp mayonnaise
- 1 tbsp lemon juice
- 1 stalk celery, finely diced
- 2 tbsp chives
- Salt, pepper
- 4 top-split hot dog buns
- 2 tbsp butter, softened
- Lemon wedges

Mix lobster gently with mayonnaise, lemon juice, celery, chives, salt, and pepper.

Butter the outside of each bun.

Toast buns in a skillet over medium heat until golden on both sides.

Stuff each toasted bun with the lobster mixture.

Serve with lemon wedges and potato chips.
