Romanian Sarmale
Sour cabbage rolls stuffed with seasoned pork and rice, slowly braised until the leaves are tender and the filling is rich and savory.
Ingredients
- 1 head sour cabbage (or fresh cabbage softened in brine)
- 1.5 lbs ground pork
- 1/2 cup rice
- 1 onion, finely diced
- 1 tbsp paprika
- 1 tsp thyme
- 2 cups tomato sauce
- Smoked bacon strips
- Salt, pepper
- Sour cream for serving

Separate cabbage leaves carefully. Trim thick veins so they roll easily.

Mix pork, rice, onion, paprika, thyme, salt, and pepper.

Place a spoonful of filling on each leaf. Roll up, tucking in the sides.

Layer bacon strips at the bottom of a heavy pot. Pack rolls in tight rows. Cover with tomato sauce and water to just cover.

Simmer covered on low for 2 hours. Serve with sour cream and crusty bread.
