Argentinian Alfajores
Argentina's beloved sandwich cookies: two delicate cornstarch shortbreads filled with rich dulce de leche and rolled in coconut.
Ingredients
- 1 cup cornstarch
- 3/4 cup flour
- 1/2 cup powdered sugar
- 1 tsp baking powder
- 2/3 cup butter, softened
- 2 egg yolks
- 1 tsp vanilla
- 1 cup dulce de leche
- 1 cup shredded coconut

Whisk cornstarch, flour, sugar, and baking powder.

Cream butter, then beat in yolks and vanilla. Add dry ingredients to form a soft dough. Chill 30 minutes.

Roll out to 1/4 inch thick. Cut 2-inch circles. Bake at 350°F for 10-12 minutes until set but not browned.

Cool completely. Sandwich pairs with a generous dollop of dulce de leche.

Roll the exposed edges in shredded coconut so the filling sticks to it.
