French Chocolate Mousse
The classic French chocolate dessert: airy, intensely chocolatey, and light as a cloud. Just a handful of ingredients.
Ingredients
- 8 oz bittersweet chocolate, chopped
- 4 tbsp butter
- 4 eggs, separated
- 1/4 cup sugar
- 1 cup heavy cream
- 1 tsp vanilla
- Pinch of salt

Melt chocolate and butter together over a double boiler. Cool slightly.

Whisk egg yolks into the chocolate mixture.

Whip egg whites with salt to soft peaks. Add sugar and beat to stiff peaks.

Whip cream with vanilla to soft peaks.

Fold whipped cream into chocolate mixture, then fold in egg whites in two additions until smooth and uniform. Spoon into glasses. Chill at least 4 hours.
