Egyptian Ful Medames
Egypt's most beloved breakfast: stewed fava beans seasoned with cumin, lemon, and garlic, drizzled with olive oil and served with warm pita.
Ingredients
- 2 cans (15 oz each) fava beans, drained
- 3 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp salt
- Juice of 1 lemon
- 3 tbsp olive oil
- Toppings: chopped tomato, parsley, hard-boiled eggs, sliced onion
- Warm pita bread

Heat fava beans in a saucepan with 1/2 cup water until warmed through, 5-10 minutes.

Mash garlic with salt to a paste. Add to the beans along with cumin and lemon juice.

Mash about half the beans with a fork to thicken, leaving the rest whole.

Drizzle generously with olive oil.

Top with diced tomato, parsley, hard-boiled egg, and onion. Serve with warm pita for scooping.
