Ingredients

  • 2 cans (15 oz each) fava beans, drained
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp salt
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Toppings: chopped tomato, parsley, hard-boiled eggs, sliced onion
  • Warm pita bread

Instructions

    Heat fava beans in a saucepan with 1/2 cup water until warmed through, 5-10 minutes.

    Mash garlic with salt to a paste. Add to the beans along with cumin and lemon juice.

    Mash about half the beans with a fork to thicken, leaving the rest whole.

    Drizzle generously with olive oil.

    Top with diced tomato, parsley, hard-boiled egg, and onion. Serve with warm pita for scooping.
