Indonesian Gado-Gado
Indonesia's beloved 'mix-mix' salad: blanched vegetables, hard-boiled eggs, tofu, and tempeh tossed with a rich peanut sauce.
Ingredients
- 1 cup green beans
- 1 cup cabbage, shredded
- 1 cup bean sprouts
- 2 potatoes, boiled and sliced
- 4 hard-boiled eggs, halved
- 8 oz fried tofu, cubed
- 1 cucumber, sliced
- Peanut sauce: 1 cup peanut butter, 2 tbsp soy sauce, 2 tbsp brown sugar, 2 cloves garlic, 1 tbsp lime juice, 1 tsp chili paste, 1/2 cup water
- Fried shallots, krupuk (shrimp crackers)

Blanch green beans, cabbage, and bean sprouts separately for 1-2 minutes each. Drain.

Make peanut sauce: Whisk all sauce ingredients until smooth. Adjust water for desired thickness.

Arrange all vegetables, potatoes, eggs, and tofu on a large platter.

Drizzle generously with peanut sauce.

Top with fried shallots and serve with shrimp crackers on the side.
