Ingredients

  • 1 cup green beans
  • 1 cup cabbage, shredded
  • 1 cup bean sprouts
  • 2 potatoes, boiled and sliced
  • 4 hard-boiled eggs, halved
  • 8 oz fried tofu, cubed
  • 1 cucumber, sliced
  • Peanut sauce: 1 cup peanut butter, 2 tbsp soy sauce, 2 tbsp brown sugar, 2 cloves garlic, 1 tbsp lime juice, 1 tsp chili paste, 1/2 cup water
  • Fried shallots, krupuk (shrimp crackers)

    Blanch green beans, cabbage, and bean sprouts separately for 1-2 minutes each. Drain.

    Make peanut sauce: Whisk all sauce ingredients until smooth. Adjust water for desired thickness.

    Arrange all vegetables, potatoes, eggs, and tofu on a large platter.

    Drizzle generously with peanut sauce.

    Top with fried shallots and serve with shrimp crackers on the side.
