Vietnamese Banh Mi
Vietnam's iconic French-Vietnamese sandwich: a crispy baguette filled with savory meat, pickled vegetables, fresh herbs, and chili.
Ingredients
- 4 small baguettes or French rolls
- 1 lb pork shoulder or chicken thigh, marinated in lemongrass, fish sauce, sugar, garlic
- Pickled vegetables: 1 carrot and 1 daikon (julienned), 1/2 cup vinegar, 1/2 cup water, 1/4 cup sugar, 1 tsp salt
- Mayo, pâté (optional)
- Cucumber, cilantro, jalapeño, soy sauce

Pickle vegetables: Toss carrot and daikon with vinegar, water, sugar, and salt. Let sit 30 minutes.

Grill or pan-fry the marinated pork until caramelized and cooked through. Slice thinly.

Split baguettes. Spread mayo (and pâté if using) on the inside.

Layer pork, pickled vegetables, cucumber slices, cilantro, and jalapeño.

Drizzle with a few drops of soy sauce. Press the sandwich closed and eat immediately.
