Israeli Sabich

An Iraqi-Jewish breakfast brought to Israel: pita stuffed with fried eggplant, hard-boiled eggs, hummus, salads, and amba (mango pickle sauce).

Ingredients

  • 1 large eggplant, sliced
  • 4 pitas
  • 4 hard-boiled eggs, sliced
  • 1 cup hummus
  • Israeli salad: 2 tomatoes, 1 cucumber, parsley, lemon, olive oil (all diced and tossed)
  • Tahini sauce
  • Amba sauce (or mango chutney mixed with curry powder)
  • Vegetable oil

Instructions

    Salt eggplant slices, let sit 15 minutes, pat dry. Fry in oil until golden on both sides. Drain.

    Warm pitas and split open into pockets.

    Spread hummus inside each pita.

    Layer fried eggplant, sliced hard-boiled egg, and Israeli salad inside.

    Drizzle with tahini and amba sauce. Eat immediately.
