Ingredients

  • 1 lb very fresh lean lamb, finely minced (use a trusted butcher)
  • 1/2 cup fine bulgur (soaked 10 min, squeezed dry)
  • 1 small onion, finely grated
  • 1 tsp allspice
  • 1/2 tsp cinnamon
  • 1 tsp salt
  • Olive oil
  • Fresh mint, scallions, romaine leaves, warm pita

Instructions

    Combine bulgur, grated onion, allspice, cinnamon, and salt. Let sit 5 minutes.

    Mix in the minced lamb thoroughly. Knead briefly until smooth.

    Spread on a flat plate, smoothing the top.
