Syrian Kibbeh Nayeh
A raw lamb tartare from the Levant blended with bulgur and spices. Served with olive oil, fresh herbs, and warm bread.
Ingredients
- 1 lb very fresh lean lamb, finely minced (use a trusted butcher)
- 1/2 cup fine bulgur (soaked 10 min, squeezed dry)
- 1 small onion, finely grated
- 1 tsp allspice
- 1/2 tsp cinnamon
- 1 tsp salt
- Olive oil
- Fresh mint, scallions, romaine leaves, warm pita

Combine bulgur, grated onion, allspice, cinnamon, and salt. Let sit 5 minutes.

Mix in the minced lamb thoroughly. Knead briefly until smooth.

Spread on a flat plate, smoothing the top.

Drizzle generously with olive oil.

Serve immediately with mint, scallions, romaine leaves for wrapping, and warm pita.
