Portuguese Caldo Verde
Portugal's beloved kale and potato soup with smoky chorizo. Simple, hearty, and a national favorite.
Ingredients
- 1.5 lbs potatoes, peeled and cubed
- 1 large onion, diced
- 4 cloves garlic
- 8 cups water or broth
- 1 large bunch kale or collards, very thinly sliced
- 6 oz chorizo or linguica, sliced
- 1/4 cup olive oil
- Salt, pepper

Heat olive oil in a large pot. Sauté onion and garlic until soft. Add potatoes and water. Bring to a boil.

Simmer 20 minutes until potatoes are very tender.

Mash or puree about half the potatoes for a creamy texture.

Sauté chorizo separately until lightly crisped.

Add kale to the soup and simmer 5 minutes until just tender. Top each bowl with chorizo and a drizzle of olive oil.
