Swiss Rösti
Switzerland's iconic potato pancake: shredded potatoes pressed into a golden, crispy round and served with everything.
Ingredients
- 2 lbs Yukon Gold potatoes
- 4 tbsp butter
- 2 tbsp vegetable oil
- Salt, pepper

Boil whole potatoes for 8 minutes (still firm). Cool, then peel and grate on the large holes of a box grater.

Season with salt and pepper.

Heat half the butter and oil in a large non-stick skillet.

Add the grated potatoes, pressing into a round cake. Cook over medium heat for 10-12 minutes until the bottom is deep golden.

Slide onto a plate, invert into the pan with more butter, cook the other side for another 10 minutes. Serve as is or topped with a fried egg, bacon, or cheese.
