Turkish Menemen
Turkey's favorite breakfast: soft scrambled eggs cooked with tomatoes, peppers, and spices. Served straight from the pan with bread.
Ingredients
- 4 eggs
- 2 tomatoes, diced
- 2 long green peppers (or 1 bell pepper), diced
- 1 small onion, diced (optional)
- 2 tbsp butter
- 2 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp red pepper flakes
- Salt, pepper
- Crusty bread

Heat butter and oil in a skillet. Sauté onion (if using) and peppers until softened, 5 minutes.

Add tomatoes, paprika, red pepper flakes, salt, and pepper. Cook until tomatoes break down, 5 minutes.

Crack eggs directly into the pan. Stir gently with a spatula, breaking the yolks but not over-mixing. Cook on low heat until just set but still creamy, 3-4 minutes.

Serve immediately straight from the pan with crusty bread for dipping.
