Ingredients

  • 2 cups dried black beans (soaked overnight)
  • 1 lb pork shoulder, cubed
  • 1/2 lb smoked sausage, sliced
  • 1/2 lb bacon, diced
  • 1 lb pork ribs
  • 2 onions, diced
  • 6 cloves garlic
  • 2 bay leaves
  • Salt, pepper
  • Sides: white rice, sauteed collards, orange slices, farofa

Instructions

    Drain soaked beans. Place in a large pot with all meats, bay leaves, and water to cover by 2 inches.

    Bring to boil, then simmer 2-2.5 hours until beans and meat are tender.

    Sauté onions and garlic in oil. Add to the bean pot. Season with salt and pepper.

    Simmer uncovered 30 more minutes to thicken.

    Serve over rice with collards, orange slices, and farofa on the side.
