Chilean Pastel de Choclo
A Chilean casserole with a savory beef filling topped with sweet corn 'mash' and baked until golden.
Ingredients
- 1.5 lbs ground beef
- 2 onions, diced
- 3 hard-boiled eggs, sliced
- 1/2 cup raisins
- 1/2 cup black olives
- Spices: 1 tsp cumin, 1 tsp paprika, 1 tsp oregano
- Topping: 6 cups fresh corn kernels, 1/2 cup milk, 4 tbsp butter, 2 tbsp sugar, salt, fresh basil

Sauté onions in oil. Add beef and brown. Add spices, salt, and pepper.

Spread beef in a baking dish. Top with sliced eggs, raisins, and olives.

Blend corn with milk, butter, sugar, salt, and basil until smooth but textured.

Cook the corn mixture in a saucepan, stirring, until thick (about 10 minutes).
