Danish Frikadeller
Denmark's beloved pan-fried meatballs: light, tender, and slightly flattened, traditionally served with potatoes and pickled red cabbage.
Ingredients
- 1 lb ground pork
- 1/2 lb ground veal or beef
- 1 onion, finely grated
- 1 egg
- 1/4 cup flour
- 1/2 cup club soda
- 1 tsp salt
- 1/2 tsp pepper
- Pinch of allspice
- Butter for frying

Mix all ingredients except butter. Beat vigorously for 2 minutes until light and sticky. Refrigerate 15 minutes.

Heat butter in a large skillet over medium heat. Using a wet spoon, scoop oval portions of the mixture into the pan, flattening slightly into football shapes.

Fry 4-5 minutes per side until deep golden and cooked through.

Serve with boiled potatoes, brown gravy, and pickled red cabbage.
