Ingredients

  • 1.5 lbs cod fillets
  • 2 lbs potatoes, peeled and cubed
  • 1 large onion, diced
  • 4 tbsp butter
  • 3 tbsp flour
  • 2 cups whole milk
  • Salt, pepper, nutmeg
  • Fresh chives
  • Rye bread for serving

    Boil potatoes in salted water until tender. Drain.

    Poach cod in simmering salted water for 5-6 minutes until just cooked. Drain and flake.

    Sauté onion in butter until soft. Whisk in flour, cook 1 minute. Slowly add milk, whisking until smooth and thick.

    Fold in cooked potatoes and flaked cod gently. Season with salt, pepper, and a pinch of nutmeg. The texture should be chunky and creamy.
