Icelandic Fish Stew (Plokkfiskur)
A creamy mash of cod, potatoes, and onions in a buttery white sauce. Iceland's ultimate comfort food.
Ingredients
- 1.5 lbs cod fillets
- 2 lbs potatoes, peeled and cubed
- 1 large onion, diced
- 4 tbsp butter
- 3 tbsp flour
- 2 cups whole milk
- Salt, pepper, nutmeg
- Fresh chives
- Rye bread for serving

Boil potatoes in salted water until tender. Drain.

Poach cod in simmering salted water for 5-6 minutes until just cooked. Drain and flake.

Sauté onion in butter until soft. Whisk in flour, cook 1 minute. Slowly add milk, whisking until smooth and thick.

Fold in cooked potatoes and flaked cod gently. Season with salt, pepper, and a pinch of nutmeg. The texture should be chunky and creamy.

Serve in bowls topped with chives, with buttered dark rye bread on the side.
