Greek Souvlaki

Greece's most beloved street food: marinated grilled meat skewers, traditionally pork, served in pita with tzatziki and fresh vegetables.

Ingredients

  • 2 lbs pork shoulder, cubed
  • Marinade: 1/3 cup olive oil, 1/4 cup lemon juice, 4 cloves garlic, 1 tbsp oregano, 1 tsp salt, pepper
  • Tzatziki: 1 cup Greek yogurt, 1 cucumber (grated and squeezed dry), 2 cloves garlic, 1 tbsp lemon juice, dill
  • 4 pitas, sliced tomato, red onion, parsley

Instructions

    Combine marinade and pork. Refrigerate 2-4 hours.

    Mix tzatziki ingredients. Refrigerate.

    Thread pork onto skewers. Grill over high heat for 3-4 minutes per side until charred and cooked through.

    Warm pitas. Spread with tzatziki.

    Slide pork off skewers onto pita. Top with tomato, red onion, parsley. Roll up and eat.
