Mexican Horchata
Mexico's creamy rice and cinnamon drink. Sweet, refreshing, and the perfect cooling contrast to spicy food.
Ingredients
- 1 cup long-grain white rice
- 1 cinnamon stick
- 4 cups warm water (for soaking)
- 1 cup milk
- 1/2 cup sugar
- 1 tsp vanilla
- 1 tsp ground cinnamon (for serving)

Soak rice and cinnamon stick in 4 cups warm water for at least 4 hours, or overnight.

Pour the rice mixture (with the soaking water) into a blender. Blend on high for 2-3 minutes until very smooth.

Strain through a fine-mesh sieve lined with cheesecloth into a pitcher. Squeeze out all the liquid.

Stir in milk, sugar, and vanilla. Adjust sweetness to taste.

Serve over ice with a dusting of cinnamon.
