Mexican Horchata

Ingredients

  • 1 cup long-grain white rice
  • 1 cinnamon stick
  • 4 cups warm water (for soaking)
  • 1 cup milk
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1 tsp ground cinnamon (for serving)
  • Ice

Instructions

    Soak rice and cinnamon stick in 4 cups warm water for at least 4 hours, or overnight.

    Pour the rice mixture (with the soaking water) into a blender. Blend on high for 2-3 minutes until very smooth.

    Strain through a fine-mesh sieve lined with cheesecloth into a pitcher. Squeeze out all the liquid.

    Stir in milk, sugar, and vanilla. Adjust sweetness to taste.

    Serve over ice with a dusting of cinnamon.
