Moroccan Mint Tea
More than a drink, this is the Moroccan symbol of hospitality. The dramatic high pour aerates the tea and creates a frothy top.
Ingredients
- 2 tablespoons Chinese gunpowder green tea
- 1 large bunch fresh mint (spearmint preferred)
- 4-5 tablespoons sugar (to taste)
- 4 cups boiling water

Place green tea in a teapot. Add 1/2 cup boiling water. Swirl 30 seconds, then pour off and discard (this washes the tea).

Add fresh mint and sugar to the pot. Pour in remaining boiling water.

Steep for 5 minutes.

Pour a glass, then pour it back into the pot to mix. Repeat once.

Pour into glasses from a height of about 12 inches to create a foamy top. Serve hot.
