Egyptian Koshari
Egypt's national dish is a glorious carb pile-up: rice, lentils, macaroni, chickpeas, and a tangy tomato sauce, all crowned with crispy fried onions.
Ingredients
- 1 cup rice
- 1 cup brown lentils
- 1 cup elbow macaroni
- 1 can chickpeas (drained)
- 2 large onions, thinly sliced
- Tomato sauce: 2 cups crushed tomatoes, 4 cloves garlic, 2 tbsp vinegar, 1 tsp cumin, chili flakes, salt
- Vegetable oil for frying

Fry sliced onions in oil over medium heat until deep golden and crispy, 15-20 minutes. Drain on paper towels.

Cook lentils in salted water until tender, 20 minutes. Drain.

Cook rice and macaroni separately according to package.

Make sauce: sauté garlic in 2 tbsp oil, add tomatoes, cumin, chili, vinegar, and salt. Simmer 15 minutes.

Layer in bowls: rice, lentils, macaroni, chickpeas. Spoon tomato sauce over and top generously with crispy onions.
