South African Bobotie
A spiced ground meat casserole topped with a savory egg custard, this Cape Malay classic is sweet, fragrant, and unlike any meatloaf you've had.
Ingredients
- 2 lbs ground beef or lamb
- 2 onions, diced
- 2 slices bread, soaked in 1/2 cup milk
- 2 tbsp curry powder
- 1 tbsp turmeric
- 1/4 cup raisins
- 2 tbsp chutney (or apricot jam)
- 2 tbsp vinegar
- Topping: 2 eggs, 1 cup milk, 4 bay leaves
- Salt, pepper, oil

Preheat oven to 350°F. Sauté onions in oil until golden, 8 minutes. Add curry powder and turmeric, cook 1 minute.

Add ground meat and cook until browned. Stir in raisins, chutney, vinegar, salt, and pepper.

Squeeze milk from bread, mash bread into the meat mixture (reserve milk). Press into a baking dish.

Whisk eggs with the reserved milk plus extra to make 1 cup. Pour over the meat. Stick bay leaves into the top.

Bake 30-35 minutes until the topping is set and golden. Serve with yellow rice.
