Nigeria's most famous street food: thinly sliced beef coated in a peanut-spice rub called yaji, then grilled over open flame until smoky and crusted.

Ingredients

  • 2 lbs beef sirloin, thinly sliced
  • Yaji spice: 1/2 cup roasted peanuts (ground), 2 tbsp paprika, 1 tbsp ginger powder, 1 tbsp garlic powder, 1 tbsp cayenne, 1 tsp salt
  • 2 tbsp vegetable oil
  • Sliced onions, tomatoes, and cabbage for serving

Instructions

    Grind peanuts in a food processor until they form a coarse powder (don't go to peanut butter). Mix with all yaji spices.

    Toss beef slices with oil, then coat thoroughly in the yaji spice mix. Let sit 30 minutes.

    Thread beef onto skewers in an accordion style.

    Grill over high heat for 2-3 minutes per side until charred and just cooked through.

    Serve sprinkled with extra yaji and a side of sliced raw onions, tomatoes, and shredded cabbage.
