Japanese Yakitori
Japan's classic grilled chicken skewers glazed with a sweet-savory tare sauce. Izakaya street food at its finest.
Ingredients
- 2 lbs boneless chicken thighs, cut into 1-inch pieces
- 6 scallions, cut into 1-inch pieces
- Tare sauce: 1/2 cup soy sauce, 1/2 cup mirin, 1/4 cup sake, 3 tbsp sugar, 1 inch ginger (smashed), 2 cloves garlic
- Bamboo skewers (soaked 30 min)
- Shichimi togarashi

Make tare: Simmer all sauce ingredients in a small saucepan for 15 minutes until reduced and slightly syrupy. Strain.

Thread chicken and scallion pieces alternately onto skewers.

Grill over high heat for 2 minutes per side. Brush generously with tare and grill another 1-2 minutes per side, basting and turning, until caramelized.

Brush with one final coat of tare.

Serve immediately, sprinkled with shichimi togarashi.
