Lebanese Tabbouleh

The real Lebanese tabbouleh is a parsley salad with bulgur — not the other way around. Fresh, herbaceous, lemony.

Ingredients

  • 3 cups flat-leaf parsley, very finely chopped
  • 1/2 cup mint, finely chopped
  • 1/4 cup fine bulgur
  • 3 tomatoes, finely diced
  • 4 scallions, sliced
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • Salt, pepper

Instructions

    Soak bulgur in 1/2 cup hot water for 10 minutes. Drain and squeeze dry.

    Combine parsley, mint, tomatoes, scallions, and bulgur in a bowl.

    Whisk olive oil, lemon juice, salt, and pepper.

    Pour dressing over and toss thoroughly.

    Let sit 15 minutes before serving for flavors to meld.
